The Asheville Pizza and Brewing Company (aka "The Brew and View") is not really distinguished by its menu. What makes it awesome are the $3 movies that they show. Definitely not recommended to hungry vegans. Don't be fooled! That soy cheese contains casein.
A touch on the formal side, the Laughing Seed is a vegetarian culinary institution in Asheville. It has an excellent reputation and the fare is always fresh and creative. Not the best for dining on a tight budget, but try their brunch for an affordable meal on the town.
Rosetta's Kitchen is a great addition to the Asheville restaurant landscape. The food is really good (the sort of stuff that you would make for yourself and your family if you had tons of time and energy at the end of the day!) The only thing that keeps it from being 'excellent' is the pricing, which has been steadily increasing over the last couple years. Don't miss the vegan chili cheese fries or the reasonably priced chocolate cake with peanut butter frosting!
Really fabulous food with unbeatable prices! Not the best place to go with a crowd (they get overwhelmed easily), but definitely a vegan landmark.
