This restaurant offers several dishes that can be made vegan

The Soba Noodle Salad and Mixed Green Salad (without bleu cheese) are great for starters. Entrees that can be made vegan include a veggie taco and vegetable sandwich for lunch or dinner. A black bean quesadilla (without cheese) is a dinner option as well. Meals cost about $11.

If you're heading downtown to check out those many Lincoln sites or the Illinois capital stuff, there are a few places with vegan options. I like to go to Cafe Brio where they give you chips and salsa to start and I always get their spring salad. For sandwiches, one is kinda at a loss for a vegan grub, but they have a portobello sandwich which you can have them veganize (no pesto and aioli). This pretty much just leaves you with bread and a mushroom, so get some sandwich veggies and mustard and you're good to go. They have some pretty tasty hand-cut fries and sweet potato chips too.

My 4 star rating is tempered by the fact that this is Springfield and pickings are slim for veg*ns or anyone who remotely cares about healthy eating. I don't know how everyone in this city doesn't keel over from a heart attack at age 40 with all the meat they eat. Anyway, if you're stuck in Springfield, try Brio. It's the best spot in downtown area.

The margaritas are spectacular by any standard. The food is the best you'll be able to do. It's a Mexican/Carribean/American fusion. Chips, salsa, guacamole, salads, burritos.
