Bright Angel Lodge Restaurant at Grand Canyon Lodge offers breakfast, lunch, dinner and has a bar.

The granola, oatmeal and of course fruit are all vegan. Ask for soy milk instead of 2% dairy milk.

Great for ovo/lacto vegetarians - has many muffins/desert items made with eggs and/or milk. Bagels are available with or without cream cheese.
Several items on the lunch menu can be made vegan. Ask for salads without croutons and no cheese.
Unsure if veggie burger is vegan.. it is vegetarian.
Dinner menu is almost the same as lunch.. salads and burgers/veggie burgers. Fred's taco can be made vegan- just ask for TOFU. A few appetizers are all vegetarian friendly- cheese & jalepeno poppers, etc.

There aren't too many vegetarian options at the Grand Canyon, but the food that is vegetarian/veganizeable at the Bright Angel was fantastic. The Chili in a bread bowl was really good. And they had a pretty tasty veggie burger.

They fry their foods in a progressive use of oil. The first use of oil goes to the french fries, then to the onion rings and then to the non-vegetarian foods. I must say, those onion rings were tasty. (although I don't know what brand of beer they use in their batter, so if you avoid certain brands, I'd ask beforehand)
