Chipotle is very tasty and it's a quick option for vegans on the go. You can order a burrito with no tortilla - cilantro lime rice with black or pinto beans, fajita type veggies, salsa (a few choices), and lettuce and guac. While Chipotle is good - and there are quite a few of them in Vegas - try Qdoba. Same type of food, but they have both grilled veggies (zucchini, squash, onions...) and the fajita veggies to choose from. They also have a tasty mango salsa that Chipotle doesn't offer.
