I live and work in Minneapolis, and Evergreen is my #1 favorite restaurant. I go there all the time now. I've been a Veg*n for over 30 years, and it's nice to find a gem like this. Evergreen is run by a couple from Taiwan who are Buddhist. Very friendly! Though they do serve meat menu items, the vegetarian selection is quite extensive, and tasty. And they do not cook veggie food in the same Woks and pans as flesh-foods. Try it! You will be glad you did. You may even become a "regular," like me!
I should add that lots of Chinese (mainland and expat), and other Asian, people eat here -- especially on the weekends. The food is what I would call "authentic," not "americanized" chinese style(s) food.
I've eaten here, and have been grateful for some Veg*n items on the menu. They do alright, but are not really trying for the veggie market, I gather.
I love this place for it's Israeli veggie culture. The felafel sandwich is my personal favorite here. It's a fun little deli style place with tables, including some outside for summer months. Don't come between sunset Friday and sunset Saturrday though (closed)!
If you're a veggie, you can eat here. It's not the best place in town, but some good menu items. I'd recommend Evergreen Chinese Restaurant, on Nicollet, instead.
Any place I can find something to eat as a Veggie, wins points in my book. Pizza Luce has several menu items I can eat. One complaint about Pizza Luce Downtown -- twice now when I've ordered the VEGAN muffletta sandwich, they give it to me with egg in it! ARGH! I still love them though...
I like this place. The weak area is they only have a few menu items for veggies. But the few they do have are very tasty. Good service.
I love Udupi! Great food, great service. Mostly India people here - "authentic" and Hindu. Excellent, and reasaonble price. Go for the one of combinations, and come hungry!

I love Emily's! This Minneapolis "institution" is a classic, authentic, family run, Lebanese Deli. It is small but worth it. Of course, being a deli there is take-out available. My favorites are: Lentil and Rice with Tabouli, Kidney Beans and Rice with Tabouli, Spinach Pie, and Tabouli! I'd rate it higher if they had more Veg*n selections. People there are nice.
