Watercourse is a great place for vegetarian/vegan food. Some of my favorites: French Dip Sandwich, Eggplant Sandwich, BBQ Tofu, Seitan Buffalo Wings and the all-time-best Biscuits and Gravy with scrambled tofu. The food here is almost always the best it could be.
The vegan desserts are okay, as far as vegan desserts go - try the cookies, which go great with their house coffee.
The restaurant's new location means lots more seating and somewhat better parking, but the place is almost always busy, so be prepared for a short wait during peak hours.
The waitstaff is quite fun - lots of funky tattoos and piercings, which complement many of the guests. Great place for people watching.

The Mercury Cafe is one of my favorite restaurants in Denver. Their vegetarian-friendly options include the fidel burrito, vegetable linguini and dina's tofu. The light tea is a wonderful way to get a taste of lots of goodness - and the light tea always has a vegetarian option. They have vegan desserts (including a tasty vegan chocolate cake) and some of the best coffee I've ever had. The owner sources as much of the food from local, organic and sustainable sources as possible. (99% of the food is organic; 80% is local)
Other Sustainable Practices: on-site solar and wind energy (just installed last year) and low-flow toilets that you have to see to believe. They compost all their organic waste and even water the herbs and flowers around the building with their water and tea wastes.
The biggest strength of the Merc is: Community. It's a huge community hub - you will see people of all sorts participating in community meetings, casual get-togethers, film screenings, music, poetry slams and dancing. You must experience the Mercury Cafe to see how important it is to community life in Denver.
