The Cafe has definitely improved and offers some pretty tasty items! But read my review for the Cafe (under Cafe Prasad) for more info on that.
The Co-Op itself is a nice place to shop. I live in Westminster which is just about 10-13 miles from Boulder. I go to the co-op probably a few times a month. They usually have excellent produce and some pretty good sales too.
The management isn't that great.. some of the members that work there are really nice though. But I haven't really had good experience with the managers.. they seem not interested and detached.
The Co-Op could be better, but anything is open to improvement. I hope they improve upon the management and also get better at answering requests for new items.
Until then.. I will continue to shop here. I love going to Pearl St anyways... lovely place to be!!
Definitely a great place to eat. Unfortunately, it isn't really a restaurant so you don't have that nice cozy feeling. It is more like a hustle-and-bustle cafe that isn't very relaxing. The food is good though! Organic & Vegan. They also have some very tasty raw salad dressings on the salad bar. The food bar is rather pricey though.. you can make most of the dishes at home for much less. But, if you are hungry and don't want to cook, it is a great place to go. Also if you just want to stop in for a snack.
I must say, the vegan ice cream is a MUST try!! It is so good and is sweetened with Agave syrup!

Pros...
All organic. Bamboo tables, very nice eclectic atmosphere (also have some window seating where you sit on the floor)
Cons...
Too expensive for what you get
Doesn't taste that good
My boyfriend and I (both vegans) went there to try it out and we were basically disappointed at what we got for the price we had to pay ($69 for two people). He had a potato cake dish and I had some tacos. The best part was probably the vegan chocolate/espresso cake. However, it gave me a headache shortly after eating it. Hmmm.
Anyways, I love that they are trying to have a vegan/organic restaurant but honestly they need to rethink it because it is too expensive and just plain not worth it.. Sorry...
Vegan options that are pretty tasty... most of the dishes are also very spicy, so don't try it if you don't like a bit of spice in your food. Unfortunately, the injera bread isn't very flavorful. Also, we weren't impressed with the hummus dish. But the vegetarian & vegan combos are good -- definitely worth eating at on occasions.
I must say Watercourse is definitely a good place to go for a nice vegan meal. But nothing is perfect and there are some cons to it:
Some of the dishes are too salty
The sesame vegetable tofu dish is pretty much tasteless
Here are my recommendations:
Definitely try the vegan desserts! The vegan chocolate cake and the Boston cream pie are SOOO GOOD.
The tempeh scallopini is awesome
I didn't like the Amsterdam hash (breakfast) even though it sounded good... the tofu scramble was very oily and tasteless and the gravy on top was so salty it gave me a headache.
But I still enjoy going to this restaurant, you just have to know what you like and what to avoid! Their vegan bakery is expanding with more delicious assortments. I must say, the desserts are the best part....

Tina's restaurant is the BEST Ethiopian restaurant I have ever eaten at hands down!
In fact.. I just moved to Colorado and I miss eating at Tina's so very much!! She has wonderful vegan & vegetarian assortments. She uses olive oil in the place of butter. Her injera is very tasty too... Also, the house salad is great. To sum, ALL of the vegetarian dishes are absolutely delicious. We would like to coax her into relocating to Colorado! Ha ha...
I ate at a Ethiopian restaurant in Colorado and it just doesn't compare.. Tina's is the best.
The atmosphere is also very homey and welcoming. You would regret not trying it! If you love coffee, try her Ethiopian coffee. It is very strong and very aromatic and flavorful.
