Fantastic. Everything I tried from the vegan options was amazing. Ravioli... it's been over 10 years since I've had ravioli. Loved it, and the chef at the pasta station was fun to watch. Could have been more vegan dessert options but the chocolate chip cookies were really good and strawberry gelato was a nice touch.
Everything that is vegan is marked which makes it really easy. There's quite a few choices, I actually didn't get to try everything.
Definately sign up for a red card and use it if you plan to gamble at the Wynn or Encore, if you get enough points you can score 2 free buffet passes. My husband and I both got to eat free on Saturday night which is normally $39.99 per person (though if we had paid it would have still been worth it, food was so good and service was fantastic) it's a little less on weeknights. Get there early and show your red card to avoid the line up.

pricey but really great coffee, they do soy lattes and things like that.
for a pretty good deal you can get a vegan croissant sandwich "combo" one each of "egg" salad and "tuna" salad on a yummy flaky croissant. great late night snack (though keep in mind later at night the sandwiches are a little less fresh, but mine were still great, I don't think they sat very long). they have a few different vegan goodies, all marked as vegan on the menuboards.

NY style pizza. they have a few vegan options. We went for lunch. I tried the spinach and artichoke calzone. A bit pricey but big portions and really good. The marinara sauce is fantastic. Great spot for a more casual lunch on the resort. The patio was closed when we were there because it was pretty windy but normally you can sit outside by the waterfall. We got a window seat which is almost as good. Very comfy chairs, nice decor, a place you can take your time eating and have a couple drinks and not feel rushed at all.
vegan donuts! so exciting for me to find vegan donuts, and they were really really good. price is very reasonable. the location is a bit out of the way but easy enough to get there by bus from the strip and totally worth the trip
As with all restaurants on the Wynn resort, there are vegan options on the menu (if you don't see any just ask, every restaurant on this resort has vegan choices! Sometimes they are on a totally seperate menu that you have to ask for)
We went here for breakfast. A bit pricey for breakfast but we decided to have one "nice" breakfast during our stay and chose this place for the vegan choices.... I had the frosted flake crusted french toast. Comes with caramelized bananas and chocolate sauce, and REAL maple syrup. So good and the portion was huge, I couldn't finish it all. Their coffee is excellent. Great service.
maybe we went on an off day. we went for lunch. the tofu "nuggets" were semi-cold very bland chunks of tofu possibly reheated in microwave... the sauce was ok but not enough to redeem the rubbery bland tofu.. dumplings were undercooked and rubbery and also bland. spring rolls were ok. we were also the only people there, so the atmosphere was.. uncomfortable. I headed for a table by the window but she wanted us right in the middle of the place facing the counter. with no background music or anything it was pretty awkward since it seemed like the owners were watching us eat. I wouldn't recommend and I wouldn't go back. Luckily it was cheap enough that we didn't feel too horrible only eating about half of it.
Quite a few vegan choices on the menu. I had shu mai (dumplings) with gardein, and edamame for starters, and then veggie sushi roll and I chose vegan drunken noodles for main entree. Everything was fantastic. the noodle bowls are HUGE. You would think a ritzier more expensive restaurant would usually have small portions but everywhere at the Wynn and Encore had decent portions. We ended up taking leftovers up to our room which made a great snack when we got back from seeing a show later on. the noodles are even good cold.
specialty drinks are great as well, though pricey.
Dessert was phenomenal. the vegan dessert option is a brownie sundae. it's a rather large brownie with a decent sized scoop of chocolate coconut ice cream on top. very good and not too rich.
Our server was great as well, our water glasses never got below half full
