Eating vegan in Marrakech isn't as hard as you'd think. Most riads will serve Moroccan crepes/pancakes for breakfast (just flour, oil and water), the local bread, fresh fruit, jams, fresh orange juice and coffee or mint tea. Make sure to tell them you're vegan though, so they know to do things like serve olive or argan oil with the bread instead of butter.

Many of the cafes and restaurants serve vegetable cous cous or seven vegetable tajines. Be sure to check they're OK though, as many make them with animal stock. In Jemaa el Fna (the square in the Medina) there are lots of stalls selling orange juice and many that sell dried fruit.
