Guatemala City doesn´t offer many veg options, aside from beans and rice. There is also a surprising number of Chinese restaurants, where you can always get stirfried veggies and rice. Just ask anyone where a Chinese restaurant is, or walk down Avenida 3 and you will run into a lot of them.
