Fast vietnamese food in the Uptown area
The have a big vegetarian section and are very vegan-friendly. They will make fried rice without eggs if you ask, and are also accommodating about leaving out fish sauce.

Mock duck potato! Mock duck potato! Mock duck potato! Mock duck potato!
I go to Kinh Do at least a few times a year, and I am always impressed. I generally order the Tofu and Mock Duck with Cashew Nuts and I have never been disappointed. The Pad Thai without fish sauce and egg is really good as well. I don't recommend the spring rolls for they are a bit on the bland side and not worth $5.
Kinh do has some very tasty dishes, I enjoy eating here.
I really only go here for one thing, which is the mock duck with potatoes. Normally it has oyster sauce, but they'll make it without that on request. It's basically a giant plate of hot fresh potato chips with mock duck. The sauce they use is a bit too sweet, but I love fried stuff.
Their spring rolls are okay, but the dishes come out in rather large portions, so I usually skip them.
For any other Vietnamese dish, I generally prefer Lotus To Go Go.
I'm upgrading my rating from a 4 to a 6. They have painted and improved the atmosphere and quality of the food. The Pad Thai with no egg or fish sauce was really good.
This is another place I go with people who are not vegan. They have a ton of vegetarian things, and a lot of vegan ones. It's a good place to stop in on the spur of them moment, but I wouldn't plan it for an anniversary or mother's day trip. The staff is really nice, and the food comes out pretty quick. It's a good place to stop for lunch in uptown if you want fast and not too trendy.
I went to the lunch buffet and it was really good. The staff was super nice.
While it's not my favorite vietnamese restuarant, they do have a few things going for them.. they are willing to make most dishes vegan (though I don't know if they know the word vegan, so be sure to specify the things you don't want), they don't have issues with substitutions and they are conveniently located (for me).
Items you should be aware of that contain fish things unless you request otherwise: the Tofu or Mock Duck with Potatoes has oyster sauce in it, the Pad Thai & Basil Noodle dish contain fish sauce. There are probably a few other things, but these are what I remember right now.
There are definitely some good dishes here that can easily be made vegan, Kinh Do ain't bad at all. It just all pales in comparison to the former glory of a much better vietnamese restaurant, Vo's (RIP).
The best Vietnamese vegan food in the Twin Cities I've tried so far. The extensive vegetarian menu includes many treats for lovers of mock dock and tofu. In particular, the Mock Dock and Potatoes are incredible, and something of a legend in the local vegan community.
Maybe I've had bad luck, but none of my servers ever know what is vegan and what isn't. Bummer, this used to be one of my favorites.

Kinh Do is a notch above your average unidentifiable pan-Asian joint. I found the service to be friendly and prompt and my food arrived quickly. The ambience is decent---not quite a strip mall buffet, but not classy either. They have a huge selection of vegetarian dishes (many of which may or may not contain fish/oyster sauce, so make sure to ask) all of which are stir-fry variations on mock duck or tofu.
I had a mock duck with cashew nuts. It was fairly tasty; I liked the sour-tart flavor added to the mix by the banana peppers, and I appreciated the large portion size. But the mock duck wasn't cooked very much and must have been dropped into the wok straight out of the can, which is typical of most places that serve mock duck, but disappointing every time nonetheless.
Another downer: no brown rice. Why is it so hard for places to serve brown rice? It's healthier, tastier and, these days, roughly the same price as white rice.
Kinh Do seems good for take-out and attracts regulars. I like their hours and their location but, in terms of food, I'd rather go to Evergreen or Jasmine 26, which are fresher, more unusual and have a personalized touch.
