Trendy Mongolian Grill
One thing I noticed when I first arrived on the scene to check this place out was that a lot of people were going into this restaurant. Much more so than any of the other multitude of restaurants in the general vicinity. I found out why.
Not only does HuHot Mongolian Grill furnish its customers with what has to be one of the widest varieties of items to choose from to cook on their Mongolian Grill, but this is also an ultra-modern place to go. (Comparable to PF Chang's China Bistro.) There's a myriad of Veg selections to choose from en route to building your own creation, as well as plenty of Vegetarian sauces. HuHot also has a full bar to complete a perfect dining experience.

the food is alright. the fact that you have to create your own dish (i.e. you can mix a variety of sauces that they provide), makes it difficult to determine whether or not the dish will be as tasty as you wish. and then the only person you have to blame for a crappy dish is yourself.
HuHot is a great some-what mainstream restaurant for vegans/vegetarians. You choose your own ingredients from a well-stocked vegetable and noodle bar, and then top it with a selection of sauces. The sauces all have ingredient lists, so you know what you're getting.
Expect to pay around $10-12 a plate, with unlimited refills if you decide to do the noodle grill option.
