Vegan "Chicken" Salad: made with chick peas, celery, onion, relish and veganaise
Vegan Spicy "Chicken" Wrap: made from Tofu breaded with a corn meal breading and organic spices (paprika, chili powder, garlic, salt) and fried with soy oil. Customers can choose either Hot or Annie's Organic BBQ sauce for their topping.
* Both items are served on a whole wheat wrap with lettuce and campari tomatoes.

You may ask, "Why would a 'fried chicken' stand add vegan options?"
To many, the irony here may seem a bit farfetched. But, having worked in the food industry for some 20 plus years, I've learned that listening to your customers can sometimes open your eyes to simple changes that can make a noticeable impact on your business.
A few months ago I was asked to cater an event for HACC, a local community college in our area. One of the items requested for this event were some vegan and vegetarian items for the students and staff who enjoy this lifestyle. Not having much experience with vegan cooking, I turned to the Internet and found a host of recipes for the scrumptious wraps I created for the event. To my surprise, the vegan and vegetarian items were the first items to go! The students and staff came back to compliment me on the creations and to thank me for supplying them.
A short time later, I was helping at the voter polls and had the pleasure of meeting Sarah Speed, a candidate for 47th District State Representative,www.speed4pahouse.com or http://www.facebook.com/speed4pa,and vegan advocate. Sarah asked me if I had any vegan options on my menu at Bair's, to which I replied, "We do carry salads." Her answer, "Do you know how tired vegans are of having only a salad option when they go out with friends for meals?"
Our conversation sparked my curiosity for vegan cooking and inspired me to learn more about the lifestyle. Throughout the course of the next few weeks, Sarah offered to teach me about vegan eating habits and help me to come up with some vegan options for our stand. She visited my home and we played in the kitchen with several recipes and to my surprise, she wanted me to try them! You can only imagine how happy I was to find that the items we created that day were delicious and healthy and I finished every bite! I picked two of the recipes that I thought were similar to current items available at Bair's and Bair's Vegan Options were born.
Taking pride in the products you offer to your customers and preparing them in a safe manner creates a trust between business and customer providing each with one of life's greatest gifts, happiness.
