Chipotle has an amazing Vegetarian burrito. It has beans, rice, corn, and you can hold the sour cream and cheese if you're a vegan.
They also offer corn chips and salsa.

Chipolte does have a great vegan black bean burrito/taco option. The guac. is also vegan. The bad news is that Chipolte is owned by McDonald's, and that is why I don't visit very often. Additionally, I almost always get a huge gut ache after eating the black bean burrito. Who knows what that is about, but I always regret eating there afterward.
