While I was hoping to check out one of the many exclusively vegetarian Vietnamese restaurants in San Jose, I ended up at Pho 69 for a business lunch and was pleasantly surprised with their vegan options. The ambiance is sort of fast-food modern to me, but the food quality is far superior to fast food. I really appreciate the restaurant specifying that the soup has a vegetarian broth, as I've encountered numerous restaurants offering "vegetable" or "vegetarian" pho, but who only have a beef broth.

I'm nuts for pho (traditional Vietnamese soup) so I went with that. I thought it had a really good broth and I loved the presentation: a HUGE bowl of soup, and a side platter with spoons and mini bowls full of hot sauce and hoison sauce, in addition to the requisite sprouts, jalapenos, and basil. I also sampled my co-workers' Malaysian curry with tofu and vegetables, and I thought it had a really good flavor. I had the basil seed and coconut drink, which sounded quite exotic to me. The drink tasted okay and anyone that knows what basil seeds are would have known what they were getting. I, on the other hand, had no idea that they are sort of gelatinousy, which I'm not a huge fan of, but I did enjoy the big coconut chunks.
