Thai with a veg-friendly menu in Gilbert!
The Mint Thai Cafe is a spectacular place; at least for vegetarian food. (Don't let the sullied blue kitchen carpet or the cheesy decor fool you about this place.)
All regular entrees (#24-#37) can be made with tofu and rice (to go along with a wide variety of veggies and sauces). Plus, there's terrific veggie-entree selections available (#76-#85).
There's 2 veg appetizers (crispy noodles glazed with a sweet ticky sauce with bean sprouts and tofu) and temura veggies (breaded veggies deep-fried). There's also two veg soups (one with glass noodles and one with fresh mushrooms).
Dinner Entrees, soups, and appetizers run in the $7-$9 range.
Lunch specials (M-F 11am - 3 pm and Sat. 12pm - 3pm) are mostly vegetarian entrees (#101-#109), that come with your choice of protein (tofu for us), and they all go for less than $6.

From US 60, exit at Gilbert Rd. and go south. Restaurant is about half way between Baseline Rd. and Guadalupe on the east side of the street in a small strip mall.
