While these raw, cashew-based cheeses can be fairly expensive, they are worth it. The exquisite texture and tastes of each of the different cheeses gives each meal (however boring) a special flair. Crackers and cheese becomes gourmet, salads gain allure, and appetizer spreads become readily veganizable. While many vegan cooks are making their own nut based cheeses, dr cow cheeses are aged, creating a certain je ne sais quoi appeal.
