Alinea is the leader of the "molecular gastronomy movement" and is vegan-friendly
Using ingredients such as agar, kuzu, flax seeds and various powders, molecular gastronomy seeks to refine flavors and pare away extraneous ingredients. A dining party can order a 12-course, all-vegan meal with wine pairings based on the various dishes, which can include yuba (cucumber, miso and togarashi), lilac (fennel, horseradish and honeydew), tomato (fig, nicoise olive and pine nuts), transparency of raspberry and chocolate (blueberry, tobacco and maple). For the 12-course tasting menu with wine, tax and gratuity, the average cost per person is $350. The chef's menu is a 20-course meal, roughly $500 per person, including wine, tax and gratuity.
